Whether in soup, from the oven or raw in a salad: Sweet potatoes, also known as batata, are a morning glory plant, and you can also eat the leaves. Sweet potatoes do not taste like the classic potato, but very sweet – similar to fresh carrots. There are certainly endless sweet potato recipes – but today I’ll tell you my favorite recipe, which you can prepare very easily and quickly.

Sweet Potato Soup with Butternut Squash and Chili

for 4 people you should have the following in the house:

1/2 to 3/4 butternut squash, depending on size
3 sweet potatoes
2 carrots
2 apples
2 onions
3 cloves of fresh garlic
ginger, any amount
1/2 leek
1 chili
1 cup of whipped cream
1 l vegetable stock
good olive oil
cottage cheese
walnuts, chopped
parsley, chopped
good clarified butter
nutmeg, to taste
salt
pepper
some milk

 
Sweet Potato Soup with Butternut Squash and Chili It is prepared as follows:

Peel and deseed the butternut squash and cut into cubes of approx. 2-3 cm. Peel the sweet potatoes and also cut into 2-3 cm cubes. Peel and finely chop the carrots, apples, onions, garlic and ginger. Halve the chili and remove the seeds. Wash the leek and divide into 4 cm sections and cut in half again.

In a large pot, sweat the carrots, apples, onions, garlic, ginger and leeks in 2 tablespoons of clarified butter for about 4-5 minutes. Now add the butternut squash, sweet potatoes and chili and simmer again over medium heat for about 6-7 minutes, stirring occasionally. Pour in the vegetable stock and simmer covered for about 10-12 minutes over medium heat. Stir occasionally and check the doneness of the pumpkin and sweet potatoes.

Remove the chili. Now puree everything with a hand blender until creamy, fold in the whipped cream. Season with salt and pepper. If the sweet potato soup is still “too thick”, simply add a little milk and stir again until the consistency suits you.

Serve the sweet potato soup on deep plates and decorate with a dollop of cottage cheese, walnuts, parsley and good olive oil. If you like, rub fresh nutmeg over it. If you want, you can also roast croutons and put them on top. Bon appetit!

In short – after a good 30 minutes you have conjured up a soup made of sweet potatoes with butternut squash and chilli on the table.

Make your own sweet potato fries

Ingredients for approx. 4 servings:

4-5 sweet potatoes (depending on size)
potato starch
good olive oil
paprika powder
sea-salt

The sweet potato fries are prepared as follows:

Make your own sweet potato fries Wash the sweet potatoes, peel and cut into long, thin strips. Soak the strips in a large bowl with plenty of lukewarm water for about 1-2 hours, better yet overnight – because the longer the sticks are in the water, the more starch can escape and the crispier your sweet potato fries will be .

Preheat the oven to a good 220°C top and bottom heat. Pour the sweet potato fries from the water bowl into a colander, drain and pat dry with a kitchen towel or kitchen paper. Now take a large freezer bag and fill it with a few sweet potato fries and 2 tablespoons of potato starch. Hold it up so that there is plenty of air in the bag. Now shake until they are all evenly covered with potato starch. Repeat this procedure with the rest.

Now put all the fries in a large bowl, sprinkle with olive oil and, if you like, with paprika or similar. Spice up. Please do NOT add any salt just yet! Now spread all fries with sufficient distance on a baking tray lined with baking paper. Turn the fries over after about 10-12 minutes. Now bake for another 10-15 minutes until golden brown.

Take the sweet potato fries out of the oven with the baking sheet and let them rest for a few minutes. Then salt generously and place in a bowl. This goes well with a wonderful, quick dip. Bon Appetit!

Make sweet potato mash or sweet potato puree yourself

Ingredients for about 4 people:

500g sweet potatoes
200 ml whipped cream
250ml milk
100 grams of butter
Salt

It is prepared as follows:

Peel the sweet potatoes and cut into pieces of approx. 5 cm. Cook in boiling salted water or in a steamer basket for about 20-25 minutes. Drain and leave in the open pan to evaporate for 2-3 minutes. Heat the heavy cream, milk and butter in a small saucepan. In the meantime, mash the sweet potatoes vigorously with a potato masher, add the milk-whipped cream-butter mixture to the mashed sweet potatoes and mash again and mix well.

If your sweet potato puree is still too “thick” for you, then add some milk – warm milk if possible. Season with salt. If you like, you can also add some chili for a special kick or spice it up with chopped walnuts. Try yourself!

Baked sweet potatoes in aluminum foil

If possible, you need 4 sweet potatoes of the same size for 4 people. Let’s go – sweet potatoes as baked potatoes are very easy: Preheat your oven to 200 degrees. Rinse the sweet potatoes and pat dry. Place each sweet potato on a piece of aluminum foil and seal upwards.

Now for about 50 minutes on the middle shelf of your oven. You can prepare a wonderful, fresh herbal quark or serve a simple dip.

Sweet potato salad with feta and roasted pine nuts

Ingredients for about 4 people:

4 sweet potatoes
2 pears
150g feta cheese
2 tablespoons organic honey
2 teaspoons medium hot mustard
2-3 tablespoons good olive oil
2 tablespoons organic honey
roasted pine nuts
1 volume arugula
Salt
pepper

It is prepared as follows:

Preheat your oven to 200°C fan oven. Peel the sweet potatoes and cut into bite-sized cubes. Mix the sweet potatoes with some good olive oil and salt in a bowl. Place the sweet potatoes in the oven for about 15-20 minutes, until tender but still al dente.

In the meantime, cut the pears into small pieces and fold them into the cooled sweet potatoes. Chop some arugula. Cut the feta cheese into small cubes and fold everything together with the roasted pine nuts into the sweet potatoes. Mix honey, olive oil, mustard, roasted pine nuts and season with salt and pepper. Now fold everything under the sweet potatoes and serve.

This goes well with homemade bread, game, beef or poultry – but you can also just eat it like that. Tip: As the icing on the cake, feel free to add a few slices of marinated beetroot. Bon Appetit!
